Ingredients

  • 1 medium-sized head of cauliflower
  • 2 eggs
  • 1 cup grated cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh chives
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Directions

  1. Preheat the oven to 375°F (190°C) and line a baking dish with parchment paper.
  2. Remove the leaves and core from the cauliflower head and cut it into florets.
  3. Place the cauliflower florets in a food processor and pulse until they resemble a rice-like texture.
  4. Transfer the processed cauliflower to a microwave-safe bowl and microwave on high for 5 minutes. Allow it to cool slightly.
  5. Place the cooked cauliflower in a clean kitchen towel and squeeze out any excess moisture.
  6. In a large mixing bowl, whisk the eggs until well beaten.
  7. Add the grated cheddar cheese, Parmesan cheese, parsley, chives, garlic powder, onion powder, salt, and black pepper to the bowl. Mix well.
  8. Add the squeezed cauliflower to the bowl and stir until all the ingredients are evenly combined.
  9. Transfer the mixture to the prepared baking dish and press it down firmly to create an even surface.
  10. Bake in the preheated oven for 25-30 minutes or until the top turns golden brown.
  11. Remove from the oven and let it cool for a few minutes before cutting into squares.
  12. Serve the cauliflower squares warm as a delicious side dish or enjoy them as a healthy snack.
