Ingredients
- 1 medium head of cauliflower, cut into florets
- 4 tablespoons olive oil
- Salt and pepper, to taste
- Pinch of saffron threads
- 1 pound pasta of your choice
- 2 cloves garlic, minced
- 1/2 cup vegetable broth
- 1/4 cup grated Parmesan cheese
- Fresh parsley, for garnish
Directions
- Preheat the oven to 425°F (220°C).
- Place the cauliflower florets on a baking sheet. Drizzle with 2 tablespoons of olive oil, and season with salt and pepper. Toss well to coat.
- Roast the cauliflower in the preheated oven for 20-25 minutes, or until golden brown and tender.
- While the cauliflower is roasting, bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Drain and set aside.
