  • 250g rice noodles
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 red chili, finely chopped
  • 1 tablespoon laksa paste
  • 1 can (400ml) coconut milk
  • 2 cups seafood stock
  • 1 tablespoon fish sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon brown sugar
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Directions

  1. Soak the rice noodles in a bowl of hot water for about 10 minutes or until softened. Drain and set aside.
  2. Heat the vegetable oil in a large pan or wok over medium heat. Add the onion, garlic, and red chili. Cook until the onion is translucent and the mixture is fragrant.
  3. Add the laksa paste to the pan and stir-fry for about a minute, until it becomes aromatic.
  4. Pour in the coconut milk and seafood stock. Bring the mixture to a simmer and let it cook for 5 minutes to allow the flavors to meld together.

  6. Stir in the fish sauce, soy sauce, lime juice, and brown sugar. Adjust the seasoning according to your taste.
  7. Divide the soaked rice noodles among serving bowls. Ladle the hot seafood laksa over the noodles.
