- 200g fresh prawns, peeled and deveined
- 200g squid, cleaned and sliced into rings
- 200g mussels, cleaned and debearded
- 250g rice noodles
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 red chili, finely chopped
- 1 tablespoon laksa paste
- 1 can (400ml) coconut milk
- 2 cups seafood stock
- 1 tablespoon fish sauce
- 1 tablespoon soy sauce
- 1 tablespoon lime juice
- 1 tablespoon brown sugar
- Fresh cilantro, chopped (for garnish)
- Lime wedges (for serving)
Directions
- Soak the rice noodles in a bowl of hot water for about 10 minutes or until softened. Drain and set aside.
- Heat the vegetable oil in a large pan or wok over medium heat. Add the onion, garlic, and red chili. Cook until the onion is translucent and the mixture is fragrant.
- Add the laksa paste to the pan and stir-fry for about a minute, until it becomes aromatic.
