Ingredients

  • 1 1/2 pounds ground beef
  • 1/2 cup bread crumbs
  • 1/4 cup minced onion
  • 2 cloves garlic, minced
  • 1/4 cup ketchup
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 ounces cheddar cheese, cut into small cubes
  • For the Mushroom Sauce:
  • 1 tablespoon butter
  • 8 ounces mushrooms, sliced
  • 1/4 cup minced onion
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1/2 cup heavy cream
  • 1 tablespoon flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Directions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the ground beef, bread crumbs, minced onion, minced garlic, ketchup, Dijon mustard, Worcestershire sauce, salt, and black pepper. Mix well to combine.
  3. Take half of the meat mixture and press it into the bottom of a greased loaf pan.
  4. Place the cheddar cheese cubes on top of the meat mixture, evenly spacing them apart.
  5. Cover the cheese with the remaining meat mixture, pressing it down gently to seal the cheese inside.
  6. Bake the meatloaf in the preheated oven for 35-40 minutes, or until cooked through.
  7. While the meatloaf is baking, prepare the mushroom sauce. In a large skillet, melt the butter over medium heat.
  8. Add the sliced mushrooms, minced onion, and minced garlic to the skillet. Cook until the mushrooms are golden brown and the onions are softened.
  9. In a small bowl, whisk together the flour, salt, black pepper, and 1/4 cup of beef broth to create a slurry.
  10. Pour the slurry into the skillet with the mushrooms and onions. Stir well to combine.
  11. Gradually pour in the remaining beef broth and heavy cream, stirring constantly.
  12. Cook the mushroom sauce over medium heat until it thickens, about 5-7 minutes.
  13. Remove the meatloaf from the oven and let it rest for a few minutes before slicing.
  14. Serve the meatloaf slices with a generous drizzle of the mushroom sauce on top.
  15. Garnish with fresh parsley, if desired, and serve with mashed potatoes and roasted vegetables for a complete meal.
