Ingredients
- 10 cups freshly popped popcorn
- 1 cup crushed peppermint candies
- 3 tablespoons unsalted butter
- 4 cups mini marshmallows
- 1 teaspoon vanilla extract
- Red food coloring (optional)
- Additional crushed peppermint candies (for decoration)
Directions
- Line a baking sheet with parchment paper and set aside.
- In a large bowl, combine the popped popcorn and crushed peppermint candies. Mix well.
- In a saucepan, melt the butter over medium heat. Add the mini marshmallows and stir until melted and smooth.
- Remove the saucepan from heat and stir in the vanilla extract and a few drops of red food coloring (if desired) until evenly combined.
- Pour the marshmallow mixture over the popcorn. Using a spatula or greased hands, gently toss the popcorn until evenly coated with the marshmallow mixture.
