Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, diced
  • 1 cup plain yogurt

  • 2 tbsp tomato paste
  • 1 can (14.5 oz) diced tomatoes
  • 1 tbsp garam masala

  • 1/2 cup heavy cream
  • Salt and pepper to taste

Directions

  1. Set Instant Pot to sauté mode and heat oil. Add onions, garlic, and ginger, sauté until fragrant.
  2. Add chicken, garam masala, turmeric, coriander, cumin, cayenne pepper, salt, and pepper. Stir well to coat chicken.
  3. Add tomato paste, diced tomatoes, and yogurt. Stir to combine.
  4. Close lid and set Instant Pot to high pressure for 8 minutes. Quick release pressure when done.
  5. Stir in heavy cream and let simmer for 5 minutes. Adjust seasoning if needed.
  6. Serve over rice, garnished with fresh cilantro.
