Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt

  • 3/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 can (12 ounces) evaporated milk
  • Whipped cream, for serving

Directions

  1. In a food processor, pulse the flour and salt until combined. Add the butter and pulse until the mixture resembles coarse crumbs. Drizzle in the ice water and pulse until the dough comes together. Form the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 1 hour.
  2. Preheat the oven to 425°F (220°C). On a lightly floured surface, roll out the dough into a 12-inch circle. Transfer the dough to a 9-inch pie dish and trim the overhang to 1 inch. Fold the overhang under the edge of the crust and crimp the edges using your fingers or a fork. Pierce the bottom of the crust with a fork to prevent it from puffing up during baking.
  3. In a large mixing bowl, whisk together the pumpkin puree, sugar, cinnamon, ginger, cloves, salt, eggs, and evaporated milk until well combined and smooth. Pour the filling into the prepared crust.
  4. Bake the pie in the preheated oven for 15 minutes. Reduce the temperature to 350°F (180°C) and continue baking for 40-50 minutes, or until the filling is set and the crust is golden brown. If the edges of the crust start to brown too quickly, cover them with aluminum foil.
  5. Remove the pie from the oven and let it cool completely on a wire rack. Once cooled, refrigerate for at least 2 hours before serving. Serve chilled with a dollop of whipped cream on top.
