Ingredients

  • 12 lasagna noodles
  • 1 pound ground beef

  • 1 can (15 ounces) diced tomatoes, undrained

Directions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to the package instructions. Drain and set aside.
  3. In a large skillet, cook the ground beef over medium heat until browned. Add the diced onion, minced garlic, and diced red bell pepper. Cook until the vegetables are tender.
  4. Add the black beans, corn, diced tomatoes, and diced green chilies to the skillet. Stir in the taco seasoning. Cook for an additional 5 minutes, then remove from heat.
  5. In a 9x13 inch baking dish, spread a thin layer of the beef and vegetable mixture. Place a layer of lasagna noodles on top. Sprinkle with shredded cheddar and Monterey Jack cheeses. Repeat the layers, finishing with a layer of cheese on top.
  6. Sprinkle the sliced black olives, chopped cilantro, and crushed tortilla chips over the top layer of cheese.
  7. Cover the baking dish with aluminum foil and bake for 25 minutes. Then, remove the foil and bake for an additional 10 minutes or until the cheese is melted and bubbly.
  8. Remove from the oven and let it cool for a few minutes before serving. Slice into portions and serve with salsa, guacamole, and sour cream.
