Ingredients

  • 6 large egg yolks
  • 3/4 cup granulated sugar
  • 1 cup Marsala wine
  • 1 1/2 cups mascarpone cheese
  • 1 1/2 cups heavy cream
  • 1 teaspoon vanilla extract
  • 2 cups brewed espresso, cooled
  • 1/2 cup sugar
  • 30-40 ladyfinger cookies
  • Cocoa powder, for dusting

Directions

  1. In a heatproof bowl, whisk together egg yolks and sugar. Place bowl over a pot of simmering water and whisk constantly until mixture is thick and pale in color.
  2. Remove bowl from heat and whisk in Marsala wine until well combined. Let cool.
  3. In a separate bowl, beat mascarpone cheese until smooth.
  4. In another bowl, whip heavy cream and vanilla extract until stiff peaks form.
  5. Gently fold mascarpone cheese into whipped cream until well combined.
  6. Dip each ladyfinger cookie into the brewed espresso and sugar mixture, making sure to coat both sides.
  7. Arrange a layer of soaked ladyfingers in the bottom of a serving dish.
  8. Spread a layer of the mascarpone cheese mixture over the ladyfingers.
  9. Repeat layering process until all ingredients are used, ending with a layer of mascarpone cheese mixture on top.
  10. Cover and refrigerate for at least 4 hours or overnight to allow flavors to meld together.
  11. Before serving, dust the top of the tiramisu with cocoa powder for garnish.
