Ingredients

  • 1 (5-pound) boneless pork shoulder roast
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 2 tablespoons garlic, minced
  • 1/2 cup orange juice
  • 1/4 cup lime juice
  • 2 tablespoons fresh oregano, chopped
  • 2 tablespoons fresh cilantro, chopped

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Rub pork roast with olive oil, salt, and pepper.
  3. In a small bowl, mix together garlic, orange juice, lime juice, oregano, and cilantro. Place pork roast in a roasting pan and pour juice mixture over the top.
  4. Bake in preheated oven for 1 1/2 hours, or until pork is cooked through and juices run clear.
  5. Let pork rest for 10 minutes before slicing.
