Ingredients

  • 1 large eggplant
  • 2 cloves of garlic
  • 1 cup all-purpose flour
  • 1 teaspoon salt

  • 2 large eggs
  • Vegetable oil, for frying

Directions

  1. Slice the eggplant into 1/2-inch thick rounds.
  2. Place the eggplant slices on a paper towel-lined baking sheet and sprinkle salt on both sides. Let them sit for 10 minutes to extract excess moisture.
  3. While the eggplant is sitting, mince the garlic cloves.
  4. In a shallow dish, whisk together the flour, salt, black pepper, and paprika.
  5. In another shallow dish, beat the eggs.
  6. Heat enough vegetable oil in a large skillet to cover the bottom of the pan. It should be about 1/4 inch deep.
  7. Dip each eggplant slice into the flour mixture, shaking off excess, then dip it into the beaten eggs, and return it to the flour mixture. Make sure both sides are evenly coated.
  8. Carefully place the coated eggplant slices into the heated oil, working in batches if necessary to avoid overcrowding the skillet.
  9. Fry the eggplant for about 2-3 minutes on each side, or until golden brown.
  10. Remove the fried eggplant slices from the skillet and transfer them to a paper towel-lined plate to drain excess oil.
  11. In the same skillet, add the minced garlic and sauté until fragrant, about 1 minute.
  12. Serve the crispy fried eggplant with the garlic garnish on top.
