Ingredients

  • 4 large potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 small onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 can (14 ounces) diced tomatoes
  • 1 tablespoon tomato paste
  • 1 teaspoon sugar
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/4 cup mayonnaise
  • 2 teaspoons lemon juice
  • 1 tablespoon chopped fresh parsley

Directions

  1. Preheat the oven to 425°F (220°C).
  2. Wash and scrub the potatoes. Cut them into bite-sized cubes.
  3. In a large mixing bowl, toss the cubed potatoes with olive oil, smoked paprika, salt, and black pepper, ensuring each piece is coated.
  4. Spread the potatoes in a single layer on a baking sheet and bake for 20-25 minutes, or until crispy and golden brown.
  5. While the potatoes are baking, prepare the bravas sauce. In a saucepan, heat a tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, and cook until softened and lightly browned.
  6. Add the diced tomatoes, tomato paste, sugar, chili powder, and cayenne pepper (if using) to the saucepan. Stir well to combine and bring the mixture to a simmer. Cook for 10 minutes, stirring occasionally.
  7. Using an immersion blender or a regular blender, puree the sauce until smooth. Season with salt and pepper to taste.
  8. In a small bowl, mix together the mayonnaise and lemon juice. Set aside.
  9. Once the potatoes are crispy, remove them from the oven. Transfer them to a serving plate and drizzle with the bravas sauce. Serve the patatas bravas hot, garnished with a dollop of the lemon mayonnaise and sprinkled with fresh parsley.
