This classic Italian dish features linguine pasta topped with a flavorful clam sauce made with fresh clams, garlic, white wine, and herbs. It's a simple and elegant dish that can be made in under 30 minutes, making it perfect for weeknight dinners or special occasions.

Ingredients

  • 1 pound linguine pasta
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup dry white wine
  • 2 pounds fresh clams, scrubbed and cleaned
  • 1/4 teaspoon red pepper flakes
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Directions

  1. Bring a large pot of salted water to a boil. Cook the linguine according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.
  3. Increase the heat to high and add the white wine to the skillet. Bring to a boil and let it cook for 2-3 minutes to reduce slightly.
  4. Add the clams to the skillet and cover with a lid. Cook for 5-6 minutes, or until all the clams have opened. Discard any clams that do not open.
  5. Stir in the red pepper flakes, chopped parsley, salt, and pepper. Taste and adjust seasonings if needed.
  6. Add the cooked linguine to the skillet with the clam sauce. Toss well to coat the pasta with the sauce.
  7. Serve the clam sauce and linguine hot, garnished with grated Parmesan cheese.
  8. Enjoy!
