Ingredients

  • 2 pounds red potatoes, cubed
  • ½ cup mayonnaise
  • ¼ cup sour cream
  • 2 tablespoons dijon mustard
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon white vinegar
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup celery, diced
  • ½ cup red onion, diced
  • ½ cup dill pickles, diced

Directions

  1. Place the cubed potatoes in a large pot and cover with water. Bring to a boil over high heat and cook for 10-12 minutes, or until the potatoes are tender but not mushy.
  2. In the meantime, prepare the dressing by combining mayonnaise, sour cream, dijon mustard, fresh dill, white vinegar, salt, and black pepper in a large mixing bowl. Stir well to combine.
  3. Once the potatoes are cooked, drain them and let them cool slightly. Add the warm potatoes to the dressing and gently toss to coat.
  4. Fold in the diced celery, red onion, and dill pickles until evenly distributed.
  5. Cover the bowl and refrigerate for at least 1 hour to allow the flavors to meld.
  6. Before serving, give the potato salad a good stir and taste for seasoning. Adjust the salt and pepper if needed.
  7. Serve chilled and enjoy!
