Ingredients

  • Cassava roots - 2 lbs
  • Butter - 4 tbsp
  • Onion - 1 large, finely chopped
  • Garlic cloves - 3, minced
  • Green bell pepper - 1, finely chopped
  • Red bell pepper - 1, finely chopped
  • Scotch bonnet pepper - 1, deseeded and finely chopped
  • Thyme - 1 tsp, dried
  • Salt - 1 tsp
  • Black pepper - 1/2 tsp
  • Evaporated milk - 1 cup
  • Eggs - 3, beaten
  • Cheddar cheese - 1 cup, shredded
  • Shortcrust pastry - 1 sheet
  • All-purpose flour - for dusting

Directions

  1. Preheat the oven to 350°F (180°C).
  2. Peel the cassava roots and discard the tough outer layer. Cut them into small cubes.
  3. Place the cassava cubes in a large pot of boiling water and cook for about 15 minutes, or until they are tender. Drain the water.
  4. In a large skillet, melt the butter over medium heat. Add the chopped onion, minced garlic, green bell pepper, red bell pepper, and scotch bonnet pepper. Sauté until the vegetables are softened.
  5. Add the cooked cassava cubes to the skillet and mash them with a potato masher until smooth.
  6. Stir in the dried thyme, salt, black pepper, evaporated milk, beaten eggs, and shredded cheddar cheese. Mix well until all the ingredients are thoroughly combined.
  7. On a lightly floured surface, roll out the shortcrust pastry sheet to fit the size of your pie dish.
  8. Grease the pie dish with butter or cooking spray, and carefully transfer the rolled-out pastry sheet into the dish, pressing it to fit the bottom and sides.
  9. Pour the cassava mixture onto the pastry crust and spread it evenly.
  10. Place the pie dish in the preheated oven and bake for approximately 30-35 minutes, or until the crust is golden brown and the filling is set.
  11. Once cooked, remove the pie from the oven and let it cool for a few minutes before slicing and serving.
  12. Enjoy the Bermuda Cassava Pie warm or at room temperature, and savor the unique flavors of this Caribbean delight!
