Directions

  1. Preheat the oven to 425°F (220°C) and place a baking sheet in the oven to preheat.
  2. In a large mixing bowl, combine the cherries, sugar, cornstarch, almond extract, and lemon juice. Stir until the cherries are coated with the mixture and set aside to macerate for 15 minutes.
  3. Roll out one of the pie crusts and place it into a 9-inch pie dish, pressing it gently against the bottom and sides.
  4. Pour the cherry filling into the pie crust, evenly distributing the cherries.
  5. Dot the filling with small pieces of butter.
  6. Roll out the second pie crust and place it over the cherry filling. Trim the excess crust and crimp the edges to seal the pie.
