Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 pound ground beef
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 (14.5 ounce) cans diced tomatoes
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can kidney beans, rinsed and drained

Directions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and garlic and cook, stirring occasionally, until the onion is softened, about 5 minutes.
  3. Add the ground beef and cook, breaking it up with a spoon, until it is no longer pink, about 5 minutes.
  4. Stir in the cumin, paprika, chili powder, oregano, salt, and pepper.
  5. Add the tomatoes, black beans, and kidney beans and stir to combine.
  6. Bring to a simmer and cook, stirring occasionally, until the chili is thickened, about 30 minutes.
  7. Serve with your favorite toppings.
