Ingredients
- 1/4 cup butter
- 1/4 cup all-purpose flour
- 4 cups chicken broth
- 1/2 cup onion, diced
- 1/2 cup celery, diced
- 1/2 cup carrots, diced
- 1/4 teaspoon garlic powder
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried basil
- 1/4 teaspoon ground black pepper
- 2 cups shredded cheddar cheese
- 1/2 cup heavy cream
Directions
- Melt butter in a large pot over medium heat. Whisk in the flour until blended and cook for 1 minute.
- Slowly whisk in the chicken broth and bring to a boil. Reduce heat to low and simmer for 10 minutes, stirring occasionally.
- Add onion, celery, carrots, garlic powder, thyme, basil, and black pepper and simmer for 15 minutes, stirring occasionally.
- Stir in the cheese and cream and cook for an additional 5 minutes, stirring occasionally.
- Serve warm.
