Ingredients

  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 4 cups chicken broth
  • 1/2 cup onion, diced
  • 1/2 cup celery, diced
  • 1/2 cup carrots, diced
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon ground black pepper
  • 2 cups shredded cheddar cheese
  • 1/2 cup heavy cream

Directions

  1. Melt butter in a large pot over medium heat. Whisk in the flour until blended and cook for 1 minute.
  2. Slowly whisk in the chicken broth and bring to a boil. Reduce heat to low and simmer for 10 minutes, stirring occasionally.
  3. Add onion, celery, carrots, garlic powder, thyme, basil, and black pepper and simmer for 15 minutes, stirring occasionally.
  4. Stir in the cheese and cream and cook for an additional 5 minutes, stirring occasionally.
  5. Serve warm.
