Ingredients

  • 2 racks of bison back ribs
  • 2 tablespoons brown sugar
  • 2 tablespoons paprika
  • 1 tablespoon chili powder
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon ground cumin
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 cups BBQ sauce
  • 1/2 cup apple cider vinegar
  • 1/4 cup Worcestershire sauce
  • 1/4 cup honey

Directions

  1. Preheat the grill to medium heat.
  2. In a small bowl, combine the brown sugar, paprika, chili powder, garlic powder, onion powder, ground cumin, salt, and black pepper to create a dry rub.
  3. Pat the bison back ribs dry with paper towels and generously coat them with the dry rub, pressing it onto the meat to ensure adhesion.
  4. In a separate bowl, whisk together the BBQ sauce, apple cider vinegar, Worcestershire sauce, and honey to create the basting sauce.
  5. Place the ribs on the grill, bone side down, and cook for about 30 minutes, turning them occasionally.
  6. After 30 minutes, start basting the ribs with the sauce, covering them evenly. Continue grilling for another 30 minutes, basting and turning every 10 minutes.
  7. Check the internal temperature of the ribs using a meat thermometer. They are done when the temperature reaches 165°F (74°C).
  8. Remove the ribs from the grill and let them rest for 5 minutes before serving.
  9. Slice the ribs between the bones and serve with extra BBQ sauce on the side.

Interesting Facts

  • Bison meat is leaner and lower in fat compared to traditional pork or beef ribs, making it a healthier option without compromising on taste.
  • Bison is a sustainable and environmentally friendly choice, as bison herds are raised on open pastures and have a minimal impact on the ecosystem.
  • Using a dry rub and basting sauce adds layers of flavor to the ribs and helps to keep them moist during the grilling process.
  • Grilling the ribs over medium heat allows the flavors to develop slowly, resulting in tender and juicy meat.
