Ingredients
2 pounds salmon fillet, skin on
2 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/4 cup barbeque sauce
2 tablespoons fresh lemon juice
2 tablespoons chopped fresh parsley
Directions
Preheat the oven to 400 degrees F.
Place the salmon, skin side down, on a large baking sheet. Rub the salmon on both sides with the olive oil, salt, and pepper.
Bake in the preheated oven for 15 minutes.
Mix together the barbeque sauce, lemon juice, and parsley in a small bowl. Brush the mixture over the top of the salmon.
Continue baking for an additional 10-15 minutes, or until the salmon is cooked through and flakes easily when tested with a fork.
Serve hot.
