Ingredients

  • 2 cups rolled oats
  • 1/4 cup nut butter of choice
  • 1/4 cup maple syrup
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup almond milk
  • 1 teaspoon vanilla extract
  • 1/2 cup dried fruit of choice

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 8x8 inch baking dish.
  2. In a large bowl, combine oats, nut butter, maple syrup, cinnamon, baking powder, and salt. Mix until all ingredients are evenly combined.
  3. Add almond milk and vanilla extract and stir until all ingredients are evenly mixed together.
  4. Pour oatmeal mixture into prepared baking dish and spread evenly. Sprinkle dried fruit on top.
  5. Bake for 25-30 minutes, or until the top is golden brown and the oatmeal is cooked through.
  6. Serve warm and enjoy!
