Ingredients
- 2 large avocados, diced
- 1/4 cup sun-dried tomatoes in oil, chopped
- 2 tablespoons fresh parsley, chopped
- 1/4 teaspoon garlic powder
- 1/4 teaspoon dried oregano
- Salt and pepper to taste
- 8 spring roll wrappers
Directions
- In a medium bowl, combine the diced avocados, sun-dried tomatoes, parsley, garlic powder, oregano, salt and pepper.
- Mix well and set aside.
- Lay a spring roll wrapper on a flat surface and spoon a heaping tablespoon of the avocado mixture into the center of the wrapper.
- Fold the left and right edges of the wrapper towards the center, then roll the wrapper from the bottom up, tucking in the edges as you go.
- Repeat with the remaining wrappers and filling.
- Serve with your favorite dipping sauce.
