Avocado and Sun-Dried Tomato Spring Rolls

Ingredients

  • 2 large avocados, diced
  • 1/4 cup sun-dried tomatoes in oil, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon dried oregano
  • Salt and pepper to taste
  • 8 spring roll wrappers

Directions

  1. In a medium bowl, combine the diced avocados, sun-dried tomatoes, parsley, garlic powder, oregano, salt and pepper.
  2. Mix well and set aside.
  3. Lay a spring roll wrapper on a flat surface and spoon a heaping tablespoon of the avocado mixture into the center of the wrapper.
  4. Fold the left and right edges of the wrapper towards the center, then roll the wrapper from the bottom up, tucking in the edges as you go.
  5. Repeat with the remaining wrappers and filling.
  6. Serve with your favorite dipping sauce.
