Ingredients
- 2 cups jasmine rice
- 4 bone-in chicken thighs
- 4 cups chicken broth
- 4 cloves garlic, minced
- 1 thumb-sized piece of ginger, minced
- 2 tablespoons vegetable oil
- 2 tablespoons soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon fish sauce
- 1 tablespoon sugar
- 4 green onions, chopped
- Cucumber slices and cilantro, for serving
Directions
- In a large pot, bring the chicken broth to a boil. Add the chicken thighs and cook for 30 minutes or until fully cooked. Remove the chicken from the broth and set aside.
- Rinse the jasmine rice under cold water until the water runs clear. Drain well.
- In a separate saucepan, heat the vegetable oil over medium heat. Add the minced garlic and ginger and sauté until fragrant, about 2 minutes.
- Add the drained rice to the saucepan and stir to coat it with the garlic and ginger.
- Transfer the rice mixture to a rice cooker. Add 2 cups of the chicken broth from step 1 to the rice cooker. Cook according to the rice cooker's instructions.
- While the rice is cooking, make the sauce. In a small bowl, combine the soy sauce, oyster sauce, fish sauce, and sugar. Stir well to dissolve the sugar.
- Once the rice is cooked, fluff it with a fork and let it sit for a few minutes.
- To serve, place a scoop of rice on a plate. Top with a chicken thigh and sprinkle with chopped green onions. Serve with cucumber slices, cilantro, and the sauce on the side.
