Ingredients

  • 2 cups jasmine rice
  • 4 bone-in chicken thighs
  • 4 cups chicken broth
  • 4 cloves garlic, minced
  • 1 thumb-sized piece of ginger, minced
  • 2 tablespoons vegetable oil
  • 2 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon sugar
  • 4 green onions, chopped
  • Cucumber slices and cilantro, for serving

Directions

  1. In a large pot, bring the chicken broth to a boil. Add the chicken thighs and cook for 30 minutes or until fully cooked. Remove the chicken from the broth and set aside.
  2. Rinse the jasmine rice under cold water until the water runs clear. Drain well.
  3. In a separate saucepan, heat the vegetable oil over medium heat. Add the minced garlic and ginger and sauté until fragrant, about 2 minutes.
  4. Add the drained rice to the saucepan and stir to coat it with the garlic and ginger.
  5. Transfer the rice mixture to a rice cooker. Add 2 cups of the chicken broth from step 1 to the rice cooker. Cook according to the rice cooker's instructions.
  6. While the rice is cooking, make the sauce. In a small bowl, combine the soy sauce, oyster sauce, fish sauce, and sugar. Stir well to dissolve the sugar.
  7. Once the rice is cooked, fluff it with a fork and let it sit for a few minutes.
  8. To serve, place a scoop of rice on a plate. Top with a chicken thigh and sprinkle with chopped green onions. Serve with cucumber slices, cilantro, and the sauce on the side.
