Ingredients

  • 8 ounces wide rice noodles
  • 2 tablespoons vegetable oil

  • 1 bell pepper, thinly sliced
  • 1 carrot, julienned
  • 1 cup sugar snap peas
  • 1 cup Thai basil leaves
  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon lime juice
  • 1/2 cup chicken or vegetable broth

Directions

  1. Soak the rice noodles in warm water for about 15 minutes, then drain and set aside.
  2. Heat the vegetable oil in a wok or large pan over medium-high heat.
  3. Add the minced garlic and sliced chilies to the wok, and stir-fry for about 1 minute or until fragrant.
  4. Add the onion, bell pepper, carrot, and sugar snap peas to the wok, and stir-fry for about 3 minutes or until the vegetables are crisp-tender.
  5. Push the vegetables to one side of the wok and add the soaked rice noodles to the other side.
  6. In a small bowl, whisk together the soy sauce, oyster sauce, fish sauce, brown sugar, lime juice, and chicken or vegetable broth.
  7. Pour the sauce over the noodles and vegetables, and stir-fry everything together for about 2 minutes or until the noodles are heated through and well-coated with the sauce.
  8. Remove the wok from the heat and stir in the Thai basil leaves.
