Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 1/4 cup white wine or chicken broth
  • 3 tablespoons Dijon mustard
  • 2 tablespoons honey
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 slices bacon, cooked and crumbled
  • 1/2 cup sliced mushrooms
  • 1/2 cup shredded cheddar cheese

Directions

  1. In a medium bowl, combine the olive oil, white wine or chicken broth, Dijon mustard, honey, garlic powder, salt, and pepper.
  2. Place the chicken breasts in the marinade and coat them evenly. Cover and refrigerate for at least 30 minutes.
  3. Preheat oven to 350°F.
  4. Spread the bacon, mushrooms, and cheese over the chicken breasts.
  5. Bake in preheated oven for 25–30 minutes, or until chicken is cooked through.
