Celebrate the holiday season with these traditional Polish Christmas cookies. Made with a buttery dough and filled with a sweet and tangy prune filling, these cookies are perfect for sharing with loved ones. Enjoy them with a cup of warm tea or hot chocolate. This recipe takes about 2 hours to prepare and makes approximately 24 cookies.
Ingredients
- 2 cups all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 2 egg yolks
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup prune butter (lekvar)
- 1/4 cup powdered sugar, for dusting
Directions
- In a mixing bowl, cream the butter and sugar together until light and fluffy.
- Add the egg yolks and vanilla extract to the bowl, and mix well.
- Gradually add the flour and salt to the mixture, and mix until a dough forms.
- Divide the dough into 2 equal portions and wrap each in plastic wrap. Refrigerate for 30 minutes.
- Preheat the oven to 350°F (175°C).
- On a floured surface, roll out one portion of the dough to a thickness of about 1/8 inch (3mm).
- Using a round cookie cutter, cut out circles from the dough. Repeat with the second portion of dough.
- Place half of the circles on a baking sheet lined with parchment paper.
- Spoon a small amount of prune butter onto the center of each circle.
- Cover each filled circle with another circle of dough and press the edges together to seal.
- Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden.
- Remove from the oven and let cool on the baking sheet for 5 minutes.
- Transfer the cookies to a wire rack to cool completely.
- Once the cookies are cooled, dust them with powdered sugar.
