Ingredients

  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 2 tablespoons butter, melted
  • 1/3 cup warm water
  • 1/2 cup crumbled feta cheese
  • 1/4 cup grated mozzarella cheese
  • 1/4 cup grated cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley

Directions

  1. In a large bowl, mix together the flour and salt. Add the melted butter and stir until combined.
  2. Slowly add the water, stirring as you go, until a soft dough forms. Knead for 5 minutes, until the dough is smooth and elastic.
  3. Flatten the dough into a disc and wrap in plastic wrap. Refrigerate for 30 minutes.
  4. Preheat oven to 375 degrees F (190 degrees C). Grease a baking sheet.
  5. On a lightly floured surface, roll out the dough into a 12 inch circle.
  6. Spread the feta cheese in the center of the circle. Sprinkle the mozzarella, cheddar, and Parmesan cheeses over the feta cheese. Sprinkle the parsley over the cheeses.
  7. Fold the edges of the dough over the filling, pleating as you go. Place the khachapuri on the prepared baking sheet.
  8. Bake for 25 to 30 minutes, until the crust is golden brown.
  9. Remove from oven and let cool for 5 minutes before slicing and serving.
