Indonesian Chicken is a delicious and flavorful dish that combines the aromatic spices of the East with succulent chicken. Ingredients

  • 4 boneless and skinless chicken breasts
  • 1 onion, finely chopped
  • 4 cloves of garlic, minced
  • 2 red chilies, finely chopped
  • 1 tablespoon ginger, grated
  • 1 tablespoon lemongrass, finely chopped
  • 1 teaspoon turmeric powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 2 tablespoons vegetable oil
  • 1 cup coconut milk
  • 2 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Directions

  1. In a large bowl, combine the turmeric powder, ground cumin, ground coriander, and paprika. Mix well.
  2. Add the chicken breasts to the bowl and toss them in the spice mixture until evenly coated. Set aside to marinate for at least 30 minutes.
  3. Heat the vegetable oil in a large skillet over medium heat. Add the onions, garlic, red chilies, ginger, and lemongrass. Sauté until fragrant and the onions are translucent.
  4. Push the sautéed mixture to one side of the skillet and add the marinated chicken breasts to the other side. Cook the chicken for about 5 minutes on each side, or until browned.
  5. Pour in the coconut milk, soy sauce, brown sugar, and lime juice. Stir well to combine all the ingredients. Season with salt and pepper to taste.
  6. Reduce the heat to low and cover the skillet. Simmer for 15-20 minutes, or until the chicken is cooked through and tender.
  7. Remove the chicken breasts from the skillet and let them rest for a few minutes before slicing.
  8. Serve the Indonesian Chicken over steamed rice or noodles. Garnish with fresh cilantro.
