Ingredients
- 4 large eggs
- 1/4 cup shredded cheddar cheese
- 1/4 cup diced bell pepper
- 1/4 cup diced onion
- 1/4 cup diced jalapeno pepper
- 1/4 cup refried beans
- 4 6-inch corn tortillas
- 1/4 cup salsa
- Salt and pepper to taste
Directions
- Heat a large skillet over medium heat.
- Add the bell pepper, onion, and jalapeno pepper and cook until the vegetables are softened, about 5 minutes.
- Crack the eggs into a bowl and add the cheese. Whisk together until combined.
- Add the egg mixture to the skillet and cook until the eggs are set, about 5 minutes.
- Warm the refried beans in a small saucepan over medium heat.
- Warm the tortillas in the microwave for 30 seconds.
- Divide the eggs between the four tortillas and top with the refried beans and salsa.
