Ingredients

  • 4 large eggs
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup diced bell pepper
  • 1/4 cup diced onion
  • 1/4 cup diced jalapeno pepper
  • 1/4 cup refried beans
  • 4 6-inch corn tortillas
  • 1/4 cup salsa
  • Salt and pepper to taste

Directions

  1. Heat a large skillet over medium heat.
  2. Add the bell pepper, onion, and jalapeno pepper and cook until the vegetables are softened, about 5 minutes.
  3. Crack the eggs into a bowl and add the cheese. Whisk together until combined.
  4. Add the egg mixture to the skillet and cook until the eggs are set, about 5 minutes.
  5. Warm the refried beans in a small saucepan over medium heat.
  6. Warm the tortillas in the microwave for 30 seconds.
  7. Divide the eggs between the four tortillas and top with the refried beans and salsa.
  8. Serve and enjoy!
