Ingredients

  • 4 egg whites
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cream of tartar
  • 2 cups heavy cream
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1 cup raspberries

Directions

  1. Preheat oven to 300°F.
  2. In a large bowl, beat the egg whites until soft peaks form.
  3. Slowly add the sugar, one tablespoon at a time, and continue beating until stiff peaks form.
  4. Add the vanilla extract and cream of tartar, and beat until combined.
  5. Spread the meringue onto a parchment-lined baking sheet and bake for 25 minutes.
  6. In a medium bowl, whip the cream until soft peaks form.
  7. Add the powdered sugar and vanilla extract, and whip until stiff peaks form.
  8. Spread the whipped cream onto the cooled meringue.
  9. Top with the raspberries and serve.
