  • 1/2 cup grated Parmesan cheese
  • 1/2 cup chopped onion
  • 1/2 cup chopped red bell pepper
  • 1/2 cup chopped mushrooms
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon olive oil

Directions

  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, combine the ground turkey, breadcrumbs, Parmesan cheese, chopped onion, chopped red bell pepper, chopped mushrooms, minced garlic, dried thyme, dried oregano, salt, and black pepper. Mix well until all the ingredients are evenly incorporated.
  3. In a separate small bowl, mix together the shredded mozzarella cheese, chopped parsley, ketchup, Worcestershire sauce, and olive oil to create the stuffing mixture.
  4. Take half of the turkey mixture and press it evenly into the bottom of a greased loaf pan.
  5. Spread the stuffing mixture over the turkey layer, ensuring it covers the entire surface.
  6. Cover the stuffing mixture with the remaining turkey mixture, pressing it down gently to seal the stuffing inside.
  7. Bake the meatloaf in the preheated oven for 45-50 minutes, or until the internal temperature reaches 165°F (74°C).
  8. Remove the meatloaf from the oven and let it rest for 5-10 minutes before slicing and serving.
  9. Garnish with additional chopped parsley, if desired, and serve hot.
