Ingredients

  • 1 cup all-purpose flour
  • 2 eggs
  • 1/2 cup milk
  • 1/2 cup water
  • 1/4 teaspoon salt
  • 2 tablespoons butter, melted
  • 1/4 cup cream cheese
  • 1/4 cup sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1/2 cup fresh strawberries, diced

Directions

  1. In a medium bowl, whisk together the flour, eggs, milk, water, salt, and melted butter until the batter is smooth.
  2. Heat a lightly oiled skillet over medium heat. Pour a small amount of the crepe batter into the skillet and immediately tilt the skillet in a circular motion to spread the batter evenly.
  3. Cook the crepe for about 1 minute, or until the edges are lightly browned. Flip the crepe and cook on the other side for another 30 seconds.
  4. Repeat with remaining batter. Stack the finished crepes on a plate and set aside.
  5. In a medium bowl, mix together the cream cheese, sweetened condensed milk, and vanilla extract until smooth.
  6. Spread a thin layer of the cream cheese mixture onto each crepe, then top with diced strawberries.
  7. Roll up the crepes and serve.
