Ingredients
- 4 large eggs
- 1 tablespoon olive oil
- 1 cup salsa
- 1/2 cup cooked black beans
- 1/2 cup shredded Monterey Jack cheese
- 4 corn tortillas
- Salt and pepper to taste
- 1/4 cup chopped fresh cilantro
Directions
- Preheat the oven to 375°F.
- Heat the olive oil in a large skillet over medium heat. Add the eggs and cook, stirring occasionally, until the whites are set but the yolks are still runny, about 5 minutes.
- Spread 1/4 cup of salsa in the bottom of an 8-inch square baking dish. Place the tortillas on top of the salsa.
- Divide the beans among the tortillas, spreading them evenly.Top with the eggs and sprinkle with the cheese.
- Bake for 10 minutes, or until the cheese is melted and bubbling. Let cool for 5 minutes before serving.
- Garnish with cilantro and serve with remaining salsa.
