Ingredients

  • 4 slices bacon, chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 teaspoons Cajun seasoning
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 4 cups chicken broth
  • 4 cups potatoes, peeled and diced
  • 1 cup heavy cream
  • Salt and pepper to taste

Directions

  1. In a large pot, cook the bacon until crispy. Remove the bacon with a slotted spoon and set aside.
  2. In the same pot, add the diced onion and cook until translucent. Add the minced garlic and cook for another minute.
  3. Add the Cajun seasoning, paprika, and cayenne pepper to the pot. Stir well to coat the onion and garlic mixture with the spices.
  4. Pour in the chicken broth and add the diced potatoes. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20-25 minutes or until the potatoes are tender.
  5. Using a potato masher or immersion blender, partially mash the potatoes in the soup to create a creamy texture. Leave some chunks for added texture.
  6. Stir in the heavy cream and season with salt and pepper to taste. Cook for an additional 5 minutes to heat through.
  7. Serve the Cajun potato soup hot, garnished with the crispy bacon and chopped green onions.
