Gramma's Cream of Broccoli Soup
Ingredients
1 tablespoon olive oil
1 pound boneless, skinless chicken breasts, diced into small cubes
1 red bell pepper, seeded and diced
1 green bell pepper, seeded and diced
1 onion, diced
1 teaspoon chili powder
1 teaspoon cumin
1/2 teaspoon oregano
1/2 teaspoon garlic powder
1/2 teaspoon paprika
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup salsa
1/4 cup sour cream
1/2 cup shredded cheese
Fresh cilantro, for garnish
6-8 large flour tortillas
Directions
Preheat oven to 375°F.
Heat olive oil in a large skillet over medium heat.
Add chicken cubes and cook until golden brown, about 6 minutes.
Add bell peppers and onion and cook until vegetables are softened, about 8 minutes.
Add chili powder, cumin, oregano, garlic powder, paprika, salt, and pepper. Cook for 1 minute.
Add salsa and simmer for 5 minutes, stirring occasionally.
Spray a muffin tin with non-stick cooking spray.
Line each muffin cup with a tortilla and press down to fit snugly.
Fill each cup with chicken and vegetable mixture.
Top with cheese and bake for 10 minutes.
Remove from oven and let cool for 5 minutes.
Garnish with sour cream, cilantro, and additional salsa, if desired.
