These Caramel Pumpkin Blondies are a perfect treat for pumpkin lovers. Rich, moist, and packed with caramel, these blondies will melt in your mouth. With a subtle hint of cinnamon and nutmeg, they are perfect for cozy autumn evenings. The recipe is quick and easy to make, requiring simple ingredients that are likely already in your pantry. Serve them warm with a scoop of vanilla ice cream for the ultimate indulgence.

Ingredients

  • 1 cup unsalted butter, melted
  • 2 cups light brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup canned pumpkin puree
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 cup caramel sauce (homemade or store-bought)

Directions

  1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  2. In a large bowl, combine the melted butter and brown sugar. Mix until well combined.
  3. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and pumpkin puree.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  5. Pour half of the batter into the prepared baking dish. Drizzle half of the caramel sauce over the batter. Use a knife or spatula to swirl the caramel into the batter. Repeat with the remaining batter and caramel sauce.
  6. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. The blondies should be set and slightly golden on top.
  7. Remove from the oven and let cool in the baking dish for 10 minutes. Then, transfer to a wire rack to cool completely.
  8. Cut into squares and serve. Optionally, drizzle additional caramel sauce on top before serving.
