Ingredients
1 cup wild rice
2 cups vegetable broth
1 can black beans, drained and rinsed
1 red bell pepper, diced
1/4 cup chopped fresh cilantro
1/4 cup olive oil
2 tablespoons red wine vinegar
1 teaspoon cumin
Salt and pepper to taste
Directions
In a medium saucepan, bring the wild rice and vegetable broth to a boil.
Reduce the heat to low and simmer, covered, for 30 minutes, or until the rice is tender.
Drain off any excess liquid and transfer the cooked rice to a large bowl.
Add the black beans, bell pepper, cilantro, olive oil, red wine vinegar, cumin, salt, and pepper to the bowl and stir to combine.
Taste and adjust seasonings as needed.
Serve the salad warm or cold.

Wild rice is a type of grass seed, not a true grain.
It is high in protein, fiber, and B vitamins.
Black beans are an excellent source of plant-based protein and fiber.
This salad can be served as a side dish or as a main course.
