Ingredients
- 1 cup wild rice
- 2 cups vegetable broth
- 1 can black beans, drained and rinsed
- 1 red bell pepper, diced
- 1/4 cup chopped fresh cilantro
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon cumin
- Salt and pepper to taste
Directions
- In a medium saucepan, bring the wild rice and vegetable broth to a boil.
- Reduce the heat to low and simmer, covered, for 30 minutes, or until the rice is tender.
- Drain off any excess liquid and transfer the cooked rice to a large bowl.
- Add the black beans, bell pepper, cilantro, olive oil, red wine vinegar, cumin, salt, and pepper to the bowl and stir to combine.
- Taste and adjust seasonings as needed.
- Serve the salad warm or cold.
