Spinach lasagna is a classic Italian dish with a twist. It’s a delicious combination of layers of pasta, spinach, cheese and a savory tomato sauce. This dish is sure to be a crowd-pleaser and satisfy everyone’s taste buds.
For a simple and quick spinach lasagna recipe, start by preheating your oven to 375 degrees. Grease a 9-inch by 13-inch casserole dish and set aside. In a large pot, boil 8 ounces of lasagna noodles until al dente. Rinse the noodles and set aside.
In a skillet, heat 1 tablespoon of olive oil over medium-high heat. Add 1 onion, 2 cloves of garlic and one 16-ounce package of frozen spinach. Sauté the vegetables until they are tender. Add one 28-ounce can of crushed tomatoes and 1/2 teaspoon of dried oregano. Simmer the sauce for 20 minutes.
In a bowl, combine 2 cups of ricotta cheese, 1/2 cup of Parmesan cheese, 2 egg whites and 1/2 teaspoon of salt.
To assemble the lasagna, spread 1/2 cup of the tomato sauce in the bottom of the casserole dish. Arrange 4 lasagna noodles over the sauce. Top the noodles with 1/3 of the cheese mixture and 1/3 of the spinach mixture. Repeat the layers twice. Top the lasagna with the remaining 4 lasagna noodles and the remaining sauce. Sprinkle with the remaining Parmesan cheese.
Cover the lasagna with foil and bake for 40 minutes. Remove the foil and bake for an additional 10 minutes. Let the lasagna stand for 10 minutes before serving. Enjoy your delicious spinach lasagna!
