Ingredients

  • 4 cups grated zucchini
  • 2 cups chopped onion
  • 1 cup chopped bell pepper

  • 2 1/2 cups sugar
  • 1 1/2 cups white vinegar

  • 1 tsp celery seed
  • 1 tsp mustard seed

Directions

  1. In a large bowl, combine zucchini, onion, bell pepper, and salt. Let stand for 1 hour, then drain well.
  2. In a large saucepan, combine sugar, vinegar, cornstarch, celery seed, and mustard seed. Bring to a boil.
  3. Add zucchini mixture to the saucepan and simmer for 10 minutes, stirring occasionally.
  4. Ladle hot relish into hot, sterilized jars, leaving 1/4 inch headspace. Wipe rims clean and seal with lids.
  5. Process in a boiling water bath for 10 minutes. Remove jars and let cool before storing.
