Ingredients

  • 1 large cabbage head
  • 1 pound ground beef
  • 1 cup cauliflower rice
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 can tomato sauce
  • 1/2 cup beef broth
  • Fresh parsley, for garnish

Directions

  1. Preheat the oven to 375°F (190°C).
  2. Bring a large pot of salted water to a boil. Add the whole cabbage head and cook for 8-10 minutes until the leaves are slightly softened. Remove the cabbage from the water and let it cool. Once cooled, carefully remove the leaves, trying not to tear them.
  3. In a large skillet, heat some olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened and fragrant.
  4. Add the ground beef to the skillet and cook until browned. Make sure to break it into small pieces with a wooden spoon.
  5. Add the cauliflower rice, dried thyme, dried oregano, paprika, salt, and black pepper to the skillet. Stir well to combine all the ingredients.
  6. Pour in the tomato sauce and beef broth, and mix until everything is evenly coated. Let the mixture simmer for 5 minutes.
  7. Take a cabbage leaf and place a spoonful of the beef mixture at the base. Roll the leaf tightly, tucking in the sides as you go, similar to rolling a burrito. Repeat with the remaining cabbage leaves and filling.
  8. Place the rolled cabbage leaves in a baking dish and pour any remaining tomato sauce over them. Cover the dish with foil.
  9. Bake in the preheated oven for 30 minutes. Then remove the foil and bake for an additional 10 minutes to allow the tops to brown slightly.
  10. Garnish with fresh parsley before serving. Enjoy!
