Ingredients
- 1 large cabbage head
- 1 pound ground beef
- 1 cup cauliflower rice
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 can tomato sauce
- 1/2 cup beef broth
- Fresh parsley, for garnish
Directions
- Preheat the oven to 375°F (190°C).
- Bring a large pot of salted water to a boil. Add the whole cabbage head and cook for 8-10 minutes until the leaves are slightly softened. Remove the cabbage from the water and let it cool. Once cooled, carefully remove the leaves, trying not to tear them.
- In a large skillet, heat some olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened and fragrant.
- Add the ground beef to the skillet and cook until browned. Make sure to break it into small pieces with a wooden spoon.
- Add the cauliflower rice, dried thyme, dried oregano, paprika, salt, and black pepper to the skillet. Stir well to combine all the ingredients.
- Pour in the tomato sauce and beef broth, and mix until everything is evenly coated. Let the mixture simmer for 5 minutes.
- Take a cabbage leaf and place a spoonful of the beef mixture at the base. Roll the leaf tightly, tucking in the sides as you go, similar to rolling a burrito. Repeat with the remaining cabbage leaves and filling.
- Place the rolled cabbage leaves in a baking dish and pour any remaining tomato sauce over them. Cover the dish with foil.
- Bake in the preheated oven for 30 minutes. Then remove the foil and bake for an additional 10 minutes to allow the tops to brown slightly.
- Garnish with fresh parsley before serving. Enjoy!
