Ingredients

  • 1 cup unsalted butter, softened
  • 1 1/4 cups brown sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup dried cranberries
  • 1/2 cup white chocolate chips
  • 4 ounces cream cheese, softened
  • 2 cups powdered sugar
  • 1 teaspoon orange extract
  • 1/4 cup dried cranberries, chopped
  • 1/4 cup white chocolate chips, melted

Directions

  1. Preheat the oven to 350°F (175°C) and line a 9x13-inch baking pan with parchment paper.
  2. In a large bowl, cream together the softened butter and brown sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  3. In a separate bowl, combine the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the dried cranberries and white chocolate chips.
  4. Spread the batter evenly into the prepared baking pan. Bake for 20-25 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean. Allow the blondie base to cool completely.
  5. In another bowl, beat together the cream cheese, powdered sugar, and orange extract until smooth and creamy. Spread the cream cheese frosting evenly over the cooled blondie base. Sprinkle the chopped dried cranberries on top.
  6. Place the white chocolate chips in a microwave-safe bowl and microwave in 30-second intervals, stirring in between, until melted and smooth. Drizzle the melted white chocolate over the cranberries.
  7. Refrigerate the bars for at least 1 hour to allow the frosting to set. Once chilled, remove from the refrigerator and cut into squares. Serve and enjoy!
