Ingredients

  • 1 package of your favorite pasta
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1/2 cup of sweet corn
  • 1/2 cup of black beans
  • 1/2 cup of diced tomatoes
  • 1/2 cup of diced cucumber
  • 1/2 cup of crumbled feta cheese
  • 1/4 cup of olive oil
  • 1/4 cup of balsamic vinegar
  • 1 tablespoon of honey
  • Salt and pepper to taste

Directions

  1. Cook the pasta according to the instructions on the package.
  2. Drain the pasta and rinse with cold water.
  3. In a large bowl, combine the cooked pasta, bell peppers, corn, black beans, tomatoes, cucumber, and feta cheese.
  4. In a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper.
  5. Pour the dressing over the pasta and vegetables and toss to combine.
  6. Serve chilled or at room temperature.
