Ingredients
- 1 package of your favorite pasta
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 green bell pepper, chopped
- 1/2 cup of sweet corn
- 1/2 cup of black beans
- 1/2 cup of diced tomatoes
- 1/2 cup of diced cucumber
- 1/2 cup of crumbled feta cheese
- 1/4 cup of olive oil
- 1/4 cup of balsamic vinegar
- 1 tablespoon of honey
- Salt and pepper to taste
Directions
- Cook the pasta according to the instructions on the package.
- Drain the pasta and rinse with cold water.
- In a large bowl, combine the cooked pasta, bell peppers, corn, black beans, tomatoes, cucumber, and feta cheese.
- In a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper.
