Ingredients
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup (1 stick) butter, softened
- 1/2 cup packed brown sugar
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups butterscotch chips
Directions
- Preheat oven to 350°F. Line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking soda and salt. Set aside.
- In a large bowl, using an electric mixer, beat the butter, brown sugar and granulated sugar until light and fluffy.
- Add the egg and vanilla and beat until combined. Beat in the flour mixture until just combined.
- Stir in the butterscotch chips.
- Drop the dough by tablespoons onto the prepared baking sheet.
- Bake for 12-14 minutes, until golden brown. Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
