Rocky Road Popcorn Truffles

Ingredients

• 2 cups popped popcorn
• 1/2 cup mini marshmallows
• 1/2 cup semi-sweet chocolate chips
• 3/4 cup semi-sweet chocolate chips, melted

Directions

1. In a large bowl, combine the popcorn, marshmallows, and chocolate chips.
2. Using a small cookie scoop, scoop the popcorn mixture into small balls and place on a parchment-lined baking sheet.
3. Melt the chocolate chips in a microwave-safe bowl, stirring every 30 seconds until completely melted.
4. Using a fork, dip each ball into the melted chocolate, tapping off any excess chocolate.
5. Place the chocolate-covered balls back on the parchment paper and refrigerate for 10 minutes.
6. Enjoy!
