Ingredients

  • 2 large potatoes
  • 1 small onion
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon dried oregano
  • 1/4 cup vegetable oil

Directions

  1. Peel and grate the potatoes and onion into a large bowl.
  2. Add the garlic, flour, baking powder, salt, pepper, thyme, and oregano, and mix until combined.
  3. Heat the oil in a large skillet over medium heat.
  4. Form the potato mixture into small patties and carefully place in the hot oil.
  5. Fry for 4-5 minutes, then flip and fry for an additional 4-5 minutes, or until golden and crispy.
  6. Remove from the skillet and drain on paper towels.
  7. Serve hot with your favorite condiments.
