Ingredients
- 2 cans of black beans, drained and rinsed
- 1 cup of diced tomatoes
- 1 cup of diced bell peppers
- 1/2 cup of diced red onions
- 1/2 cup of diced jalapeno peppers
- 1/2 cup of salsa
- 1/2 cup of plain Greek yogurt
- 1 cup of shredded Mexican cheese blend
- 1/2 cup of chopped fresh cilantro
- Tortilla chips, for serving
Directions
- In a large bowl, combine the black beans, tomatoes, bell peppers, red onions, jalapeno peppers, and salsa.
- Spread the mixture evenly into the bottom of a 9 inch pie dish.
- In a separate bowl, combine the Greek yogurt and Mexican cheese blend.
- Spread the yogurt and cheese mixture evenly over the bean mixture.
- Top with the chopped fresh cilantro.
- Bake in a preheated oven at 350°F for 20 minutes.
- Serve with tortilla chips.
