Ingredients

  • 2 cans of black beans, drained and rinsed
  • 1 cup of diced tomatoes
  • 1 cup of diced bell peppers
  • 1/2 cup of diced red onions
  • 1/2 cup of diced jalapeno peppers
  • 1/2 cup of salsa
  • 1/2 cup of plain Greek yogurt
  • 1 cup of shredded Mexican cheese blend
  • 1/2 cup of chopped fresh cilantro
  • Tortilla chips, for serving

Directions

  1. In a large bowl, combine the black beans, tomatoes, bell peppers, red onions, jalapeno peppers, and salsa.
  2. Spread the mixture evenly into the bottom of a 9 inch pie dish.
  3. In a separate bowl, combine the Greek yogurt and Mexican cheese blend.
  4. Spread the yogurt and cheese mixture evenly over the bean mixture.
  5. Top with the chopped fresh cilantro.
  6. Bake in a preheated oven at 350°F for 20 minutes.
  7. Serve with tortilla chips.
