Ingredients

  • 1 lb boneless, skinless chicken breast, cut into cubes
  • 1 cup Greek yogurt
  • 2 tbsp olive oil
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 1 can diced tomatoes
  • 1 cup chicken broth
  • 1 tbsp garam masala
  • 1 tsp turmeric
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Directions

  1. In a bowl, combine chicken cubes, Greek yogurt, olive oil, salt, and pepper. Marinate for at least 30 minutes.
  2. Heat a large skillet over medium heat. Add marinated chicken and cook until browned, about 5-6 minutes. Remove chicken from the skillet and set aside.
  3. In the same skillet, sauté onions, garlic, and ginger until fragrant, about 2-3 minutes.
  4. Stir in diced tomatoes, chicken broth, garam masala, turmeric, paprika, cayenne pepper, salt, and pepper. Bring to a simmer.
  5. Add the cooked chicken back to the skillet and simmer for another 10-15 minutes, until the chicken is cooked through and the sauce has thickened.
  6. Garnish with fresh cilantro before serving. Serve with rice or naan bread.
