Ingredients

  • 1 tablespoon olive oil
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (15 ounce) can green beans, drained and rinsed
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste

Directions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add onion and garlic; cook until onion is translucent, about 5 minutes.
  3. Stir in diced tomatoes, green beans, chili powder, and cumin.
  4. Bring to a simmer and cook for 5 minutes, stirring occasionally.
  5. Season with salt and pepper to taste.
  6. Serve over cooked rice or as a side dish.
