Ingredients

  • 1 pound ground beef
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (4 ounce) can diced green chilies
  • 1 (10 ounce) can enchilada sauce
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (12-14 ounce) package corn tortillas
  • 2 cups shredded Mexican cheese blend

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. In a large skillet over medium-high heat, cook the ground beef until no longer pink. Drain fat.
  3. Add the tomatoes, green chilies, enchilada sauce, chili powder, cumin, garlic powder, onion powder, salt and pepper. Simmer for 10 minutes.
  4. In a 9x13 inch baking dish, layer half of the tortillas, half of the beef mixture, and half of the cheese.
  5. Repeat layers.
  6. Bake for 25 minutes, or until cheese is melted and bubbly.
