Ingredients
- 1 pound ground beef
- 1 packet taco seasoning
- 1/2 cup water
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (15 ounces) corn, drained
- 1 cup salsa
- 8 small flour tortillas
- 2 cups shredded cheddar cheese
- Toppings: sour cream, guacamole, chopped tomatoes, sliced jalapenos
Directions
- Preheat the oven to 375°F (190°C).
- In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
- Add the taco seasoning and water to the skillet. Stir well to combine. Cook for 2-3 minutes, or until the mixture thickens slightly.
- Stir in the black beans, corn, and salsa. Cook for an additional 5 minutes, stirring occasionally.
- Spread a thin layer of the beef mixture on the bottom of a 9x13-inch baking dish.
